Subject: More on plurals, with apologies

While birding one day not far from here
I happened to look in the atmosphere.
Overhead were loud birds,
But I couldn't think of the words
To describe what I once called "Killdeer".
It's great to be out in nature,
But it's hard to use nomenclature.
Whether in town or it's rural,
What should I say when they're plural?
(Let alone if they're "young" or "immature")
Or should we stick to names scientific?
Some would think of that as terrific!
But are they "turdus" or "turdii'?
What do I shout as they go by?
Could someone please be specific!
Obviously in need of a field trip,
