Good shorebirding spots in Oregon along the coast include:

south jetty of the Columbia River

Tillamook sandspit

Newport behind the Marine Science Museum

Siltcoos outlet

Bandon Marsh and south jetty area

A good place to seawatch is Boiler Bay.

Yaquina head also has a nice lookout and seabird colonies, but
most nesting birds will probably be gone by the time you
get there.

For land birds, Coffenberry Lake in Fort Stevens State Park
(Astoria area) is nice.

You can see many high elevation species only 20 miles from
Ashland in the Hyatt Lake area.

There are so many pullouts with good spots to look right
along the highway along the coast that you could spend your
entire trip just birding there.

If you would like more precise directions to any of the
place I mentioned that might fit into your itinerary,
let me know.
