Sahuarita Tortilla Factory, a hole-in-the-wall north of Madera
Canyon in Sahuarita.
The "factory" (about three women making tortillas like crazy) make
buttermilk+flour tortillas every morning. The owner makes tamales
that are the only REAL tamales I've ever had - starting with corn
whacked off the cob, soaked in lime water, and turned into mush
then tamales. Nothing like the dry, crumbly things made from
tortilla masa. Their meals are cheap, too, and the folks really
friendly. Her tamales get shipped to LA and the east coast, last
time I asked, and she makes an unbelievable number of them during
the Easter season (tamales are a traditional Easter treat in
Mexico). Perhaps "politically correct" thinking is a pain in
the ass, but when it comes to food, "ethnically correct" cooking
win hands down! This is the real tamale! (you just knew I'd
squeeze a pun in, didn't you?)
There's also a really good Mexican restuarant in Douglas but
I forget the name...
