The"incredibly beautiful, large, black birds constantly soaring
in the breeze right along the waterfront" in Puerto Vallarta were
probably
Magnificant frigatebirds.

We were there about 10 years ago when we were just getting into birding,
so we didn't actively seek out birding spots. However, I distinctly
remember sitting at a little cafe in an island in the middle of the
river near downtown, munching quesadillas, and watching a parade of
shorebirds, including Black-necked stilts, walk by on the other shore!
Word to the wise: when hiking in the hills above the city looking for
birds, beware the time-share-condo salesmen, who accost the unwary
tourist even out in the woods!
