I would say that there is a subtle difference between 'twitching' and
'listing'. Wouldn't keeping a life or county list of birds you have seen
while out-and-about birding be listing but not necessarily twitching?

I have always interpreted twitching as 'dropping everything to go chase
after a reported bird that you need on some list you are keeping (county,
state, life, etc). Hard to define, but you know it when you see it. If
calling in sick at work is involved, you're probably twitching (not that
there's anything wrong with that.)
