To reduce the number of House Sparrows at the feeders, we use only plain
suet. The result is fewer birds overall, mainly chickadees, nuthatches,
woodpeckers and the occasional Ruby-crowned Kinglet or warbler. Once in a
while, A Song Sparrow will adopt a suet diet, but other than that no
seed-eaters will try. Anna's Hummingbirds will occasionally hover at the
suet, but I've never actually seen one appear to feed at it.

I have many species coming to suet, including seed-eaters like towhee
and junco. I wonder if they are coming for the suet or the seeds in it?
And I wonder if the hummers are attracted to suet, or is it the type of
suet cake that has insects in it?
