This also happens quite often to me. My most memorable experience occurred on my descent from the summit of Mt. Kilimanjaro. I knew that Lammergeiers (Bearded Vultures) were resident on the mountain, and I was hoping to see one. On the way down the mountain, when I realized it would be my last chance to see this magnificent bird, I cried out, "Where are my Lammergeiers?!" As soon as I closed my mouth, two of the huge birds appeared from nowhere and glided overhead, making for a spectacular end to an unforgettable climb.
