Regarding birding tours in South Africa I'd recommend Rockjumper Tours.
In Nov. 2001 I went with Borderland-tours (Tucson, AZ) and Rockjumper Tours
on an 18-day trip in South Africa that included Swaziland and Lesotho. We saw
500 bird species and of course mammals. In Jan. 2002 I went with Rockjumper
Tours to Uganda for about 2 weeks for birds and mammals, including gorillas.
Our bird list was 600 species, plus the mammals that included gorillas and
chimpanzees. Rockjumper Tours is owned by Adam Riley and Jonathan Rossouw and
includes David Hoddinott. These people are exceptional birders and very
enjoyable to be with. Some participants used Newman's Birds of Southern Africa
(Kenneth Newman) as their field guide. Others used Roberts' Birds of Southern
Africa. There is also the Southern African Birds - A Photographic Guide, Ian
Sinclair, that can complement a field guide.
