A lot of the spam is probably coming from people who are scanning the
archived email messages. Spam technology is changing fast so the
current method used to disguise email addresses almost certainly no
longer works. Current addresses such as "stuart at blarg.net" gets
disguised as "stuart AT blarg.net"

I'd recommend dropping all email addresses from the archive. Also
people should not include their email address in any message which
might be archived. Spammers love email lists since they know that these
addresses are from known working addresses - a lot of the addresses
used are fake so getting a known address is worth money to them.
