Rob,
I used to lead wilderness canoe trips. Everything went into waterproof
containers which were secured to the boat in case of a capsize.
Unfortunatley it does make things less accessible. Take a look at the
waterproof Vinyl floating camera bags made for this purpose. Of course, you
could slip a sturdy Ziplock-type plastic bag over them, bunched and secured
with a rubber band you can quickly remove.
