Our local hummers (Anna's and Rufous) are extremely territorial.  One will stake out a feeder and not let another one near it.  The most hummers I have seen perched at one of the feeders on my back deck has been two.  I suspect they were both females (not as territorial as the males) or a female and an immature male.  They were not there very long before they were chased off by a third hummer, a mature male.

To answer your question, a feeder capable of hosting a single bird should be fine.
